There are a lot of tricky and nasty ingredients in a salad dressing...the 2 big ones are highly refined vegetable oil and sugar. This one is a fresh creamy dressing and dip. It makes a great caesar replacement. You can use whatever fresh herbs you have adding little at a time.
Green Goddess Dressing
- 1 ripe avocado
- ¼ cup fresh basil, loosely packed
- ¼ cup fresh dill or parsley, loosely packed
- ¾ cup filtered or spring water
- 2 Tbsp lemon juice
- ½ Tbsp unpasteurized apple cider vinegar
- 1 clove garlic, minced
- 1 Tbsp red onion, chopped finely
- ½ tsp Himalayan sea salt
Combine all ingredients in a blender.
Blend until water and avocado are a smooth consistency.
Omit the herbs and add 1 tsp of Dijon mustard and another clove of garlic for a creamy Cesar-like dressing!
Store in an airtight glass jar.
This dressing lasts for 3-4 days in the fridge.
